Instant Pot chickpeas

  1. Soak chickpeas overnight (or at least 6-8 hours) in a bowl at room temperature, covering with at least 3 inches of water (they will expand a lot overnight).
  2. Drain and rinse well.
  3. Add to Instant Pot and cover with just enough water to submerge. Add salt.
  4. For more flavor, can optionally add: 3 cloves garlic, half a white onion, 1.5 tbsp olive oil, a handful of fresh herbs such as thyme or rosemary, and a pinch of black pepper.
  5. Pressure cook on high for 13-15 minutes, depending on how long they were soaked for.
  6. Quick release and serve.
