Instant Pot chickpeas

Ingredients
- 1.5 cups chickpeas
- 3-4 cups water
- 2 tsp salt
Note: This is approximately equivalent to two 12-oz cans of chickpeas
Instructions
- Soak chickpeas overnight (or at least 6-8 hours) in a bowl at room temperature, covering with at least 3 inches of water (they will expand a lot overnight).
- Drain and rinse well.
- Add to Instant Pot and cover with just enough water to submerge. Add salt.
- For more flavor, can optionally add: 3 cloves garlic, half a white onion, 1.5 tbsp olive oil, a handful of fresh herbs such as thyme or rosemary, and a pinch of black pepper.
- Pressure cook on high for 13-15 minutes, depending on how long they were soaked for.
- Quick release and serve.

- 2023-12-05: Made for Channa masala. Soaked chickpeas overnight (so around 24 hours) and cooked for 15 minutes; slightly more tender than desired.
