Creamy mushroom spinach orzo

Ingredients
- 1.5 cups orzo
- 10oz baby bella mushrooms, sliced
- 6oz baby spinach, washed
- 1/2 cup milk
- 1 tablespoon fresh thyme, if available
- 1/2 cup water
- 1/2 tsp better than bouillon concentrate
Instructions
- In a large pan (at least 3 qt), sautee garlic in oil for 2-3 minutes and then add mushrooms.
- Meanwhile, cook orzo in salted water for 8-9 minutes or according to package directions. Drain.
- Once mushrooms are tender, turn heat to low. Add orzo, milk, parmesan, thyme, and bouillon concentrate. Mix thoroughly until the sauce thickens.
- Mix spinach in, adding a bit of water if needed, until wilted.
- Salt and pepper to taste. Top with extra parmesan for serving.
