3-hour Neapolitan pizza dough

  1. Combine yeast and water until melted. Mix half the flour into the water. Add sea salt and the rest of the flour. Mix well and cover for 30 min.
  2. Fold from all four sides to make into a ball, then cover for 1 hour.
  3. If making a larger recipe, divide into ~270g dough balls. Put the balls into a lightly oiled container and cover for 2 hours.
  4. Dump each dough ball into a bed of 00 flour and coat on both sides. Transfer to a stretching table with a light dusting of semolina flour for stretching.
