3-hour Neapolitan pizza dough

Servings: one 10-12" pizza
Ingredients
- 1/4 tsp active dry yeast
- 125g warm water
- 167g 00 pizza flour
- 4g sea salt
Instructions
- Combine yeast and water until melted. Mix half the flour into the water. Add sea salt and the rest of the flour. Mix well and cover for 30 min.
- Fold from all four sides to make into a ball, then cover for 1 hour.
- If making a larger recipe, divide into ~270g dough balls. Put the balls into a lightly oiled container and cover for 2 hours.
- Dump each dough ball into a bed of 00 flour and coat on both sides. Transfer to a stretching table with a light dusting of semolina flour for stretching.
